Pineapple Soda is a Geisha micro-lot produced at Pedro Serracin's Finca Mamey in Panama. One of the hectares of the farm is devoted to the shaded cultivation of fruit trees and vegetables, providing a better environment and soil for the production of coffee. Panama Geisha stands out from other coffees by its aromas and flavors, which has made it famous over time. Here, the treatment method used is the so-called static anaerobic fermentation ( Static Cherry Anaerobic Natural ). The cherries are placed in sealed tanks, without oxygen. Pedro Serracin left the fruits to ferment for 24 to 72 hours:a relatively short period which allows to develop vibrant notes of tropical fruits thanks to the predominance of lactic acids. To be discovered in a hot filter or on ice.
