From Costa Rica, this batch of Catuai and Caturra underwent anaerobic fermentation. So, after the cherries are harvested, they are placed in airtight barrels and deprived of oxygen for 72 hours. The coffee is then dried in the sun. Once roasted, it reveals notes of apple pie, cinnamon and cloves.
