Day 5 - Coffee Advent Calendar 2022

A triple blend with character. A comforting coffee from Narval Café Lab.

In addition to the quality of the roasting offered by Narval Café Lab , located in Montreal, we were won over by the idea of seeing a trend towards the use of a steel container that can be recycled for life, on which we affix a simple , but beautiful, label. If you like what you drink, know that it is in cane format that you will find their products.

Let's talk about the coffee now, it is a blend of three coffees whose process is washed. We find coffee from Colombia (Huila), Indonesia (Sumatra) and Ethiopia (Guji). On the roast side, it is medium to dark, which makes it a nice classic with notes of dark chocolate and roasted marshmallows.

In espresso

Ratio 1:2.5. If you have an 18g portafilter for the double espresso, you will need to reach 45g of liquid ideally between 25 to 30 seconds.

In filter

The Narval team suggests using a somewhat smaller proportion with a 1:15 ratio.

Quantity: 16g of ground coffee (grain size of sugar) / cup of 240ml

  • The bloom: start by pouring 80 g of water for the first 45 seconds to release the CO2 contained in the grain and the volatile aromatic compounds;
  • Then, pour in a circular motion from the inside outwards 80 g water for another 45 seconds;
  • Wait 1 minute 30 seconds;
  • We finish with a last sequence of 80 g of water for a total steeping time of 3 minutes.
