Peru Fredeslinda Calle Jimenez
It is in the village of Alto Ihuamaca, in northern Peru, that the farm of Fredeslinda Calle Jimenez is located. After harvesting Caturra, Bourbon and Catimor cherries, the latter were depulped, then dry-fermented for 20 hours. They were dried in the sun for 20 days. We thus obtain a complex and sweet aromatic profile combining notes of fresh date and sponge toffee.
