While Onyx is known for its light roast coffees, the Eclipse sticks more to a traditional European style. By roasting the beans just after the peak of sweetness to reduce acidity, they wanted to prolong its development for a heavier body and deeply roasted sugars. Dark and syrupy, the Eclipse offers, by the cup, notes of baking chocolate, caramelized sugar and toasted vanilla.
